The sparkling 2019 Crémant du Jura Indigène is a zero dósage blend of mostly 2019 (but with a significant percentage of 2018) and is my favorite sparkling wine from Jura. They use no external yeasts for any of the fermentations; the one in bottle was produced adding unfermented vin de paille (sweet) and vin de paille in fermentation (yeasts), which makes it expensive to make. This year, they seem to have gone one step beyond, and the wine reminded me more than ever of the wines from Selosse, aging it in barrique, appley and complex. It was disgorged in December 2022.

標準香檳釀法(méthode champenoise或稱méthode traditionnelle),在裝瓶進行第二次發酵時都必須添加liqueur de tirage,這是由葡萄酒加入糖和酵母的補充液,將會協助瓶中的二次發酵,以產生綿密的氣泡(prise de mousse),由於這個必要的添加過程,讓許多自然派的生產者儘管在最後除渣後強調zero dosage/brut nature,不過是否就此能歸類為自然酒,難免還是有一些爭議。

[特價-侏羅] 2023.11.16~30 媲美獨立香檳之神     但,這個爭議停止在Stephane Tissot的Crémant du Jura Indigène這瓶氣泡酒上!因為Stephane巧妙的使用了vin de paille來當作liqueur de tirage,在生物動力法種植的Chardonnay、Pinot Noir、Poulsard和Trousseau 完成酒精發酵並調配裝瓶後,添加入侏羅產區傳統特色的麥稈甜酒vin de paille(包括成酒和發酵中的半成酒),其中的高含量果糖和天然酵母菌,恰巧扮演了瓶中二次發酵的最佳角色,完美地造就成了這瓶舉世無雙、毫無異議可稱之為原生酵母正港二次發酵法的自然氣泡酒!

NV Crémant du Jura BBF RP93 特價****.-

The NV Crémant du Jura Extra Brut Blanc de Blancs BBF (2016-2017 base) was bottled in 2018 and disgorged in 2022. It is pure Chardonnay, 50% from clay and 50% from limestone and in a proportion of 70% wine from 2016 and the rest from 2017. This matured in barrel and went through malolactic. It's more floral, with more finesse, more in the style of a Champagne with the vine de reserve aged in barrel. It's more mineral, more chalky and saltier, tastier. And it has less bottle age than the other wine I tasted next to it that was disgorged in 2019...
