驚喜!讚嘆!敬佩!是拜訪Domaine Jean Bourdy後無法言喻且久久不能平復的激動心情,就如同多年前全法最頂尖的侍酒師們在品嚐1888年的Côte du Jura Blanc之後,全體情不自禁地起立向Domaine Jean Bourdy老莊主Christian Bourdy致敬,Domaine Jean Bourdy這家源於1475年的小酒莊,在Arlay這個小村莊中,無視於外界與市場潮流的變化,幾百年來維持一貫的古老傳統,十四個世代以來日復一日,謙卑恭敬地耕耘大自然所給予的一切,每一個年份裝入每一瓶中的辛勤所得,經過時間的洗禮,演化出令人刻骨銘心且感動無比的極致美味。
Arlay位於Arbois西南方約30公里,美麗的Seille河貫穿村落,南邊緊鄰著l’Etoile,往東12公里是位於Seille上游的Château-Chalon,和Château-Chalon一樣,這裡大多是兩億年前侏羅紀中期形成的Bajocien岩層,古代海百合的殘骸累積形成極堅硬的石灰岩,不同之處是阿爾卑斯造山運動將Château-Chalon推高到至少海拔400公尺以上,而靠近Bresse平原邊陲的Arlay,平均海拔高度較低,葡萄園大多分布在約200~300公尺的山坡上。世代居住於此,Jean Bourdy擁有約10公頃的葡萄園,主要集中在Arlay和鄰近的Ruffey-sur-Seille,另0.5公頃位於Château-Chalon。三分之二的葡萄園種植Savagnin和Chadonnay等白色品種,其餘三分之一則為Poulsard、Trousseau和Pinot Noir為主的紅葡萄。酒莊目前由Jean-François和Jean-Philippe Bourdy兩兄弟負責,他們倆在九零年代分別從巴黎的商學院和博恩的釀酒學院學成畢業之後,便回到家園從父親Christian手中接下掌管家族事業的重責大任。兩兄弟合作無間,同樣將傳承傳統奉為圭臬,所有的種植與釀造皆依循祖先所遺留下來的方式,在這一成不變之中,唯一最大的改變的改變是負責種植工作的Jean-Philippe在2006年決定導入生物動力法,讓符合Ecocert的葡萄園進一步在2010得到Demeter的認證。

至今仍依古法釀造非常耐久且美味的傳統侏羅葡萄酒,
包含歷經百年不壞的黃葡萄酒。
酒莊在Arlay村中有多個不同的小酒窖,
累積世代的經驗,巧妙地運用獨特的酒窖環境,釀造酒莊不同的酒款。

釀酒與儲酒的酒窖就在Bourdy的住家所在,興建於十五世紀、外觀樸素的農舍,裡面卻保留了許多古老的用具,就像是活生生的釀酒博物館,因為這些設備和用具不僅供展示,也是被使用在日常的工作中。依循傳統,酒莊生產的酒款十分單純,主要的酒款為一白一紅,白的Côtes du Jura Blanc為100% Chardonnay釀成,僅在第一年進行添桶,由於酒窖黑暗潮濕,所以在接下來2~3年的培醞過程中,只有極少量酒液會揮發掉,因此表面也不會有白色酵母花(le voile)形成;紅的Côtes du Jura Rouge則由Poulsard、Trousseau和Pinot Noir三個品種混釀,為非常傳統式的將為三個品種混在一起共同發酵(co-fermentation),同樣在橡木桶中培醞1~2年,釀酒過程全不使用任何二氧化琉,僅在裝瓶時微量添加。無論紅白酒所使用的都是舊桶,主要是購買來自布根地、阿爾薩斯和干邑。另外,以100% Savagnin釀成的Vin Jaune和Château-Chalon,是酒莊最為最珍貴的兩款酒,至少經過五年以上桶中Sous Voile培養,定期檢視並經公會檢驗,完全符合標準之後**,才能裝瓶上市,產量極少,僅占酒莊產量的10%。由於酒莊擁有許多古老的橡木桶,用來培養所成的Vin Jaune和Château-Chalon,有著卓越出眾的深度,渾厚細緻的層次凌駕於眾多酒莊之上。
*註1:Château-Chalon為侏羅產區中最特殊特級園的產區,這裡被公認為是全世界最好的Savagnin之種植風土條件,只生產Vin Jaune,但有著比其他產區的Vin Jaune更嚴格的生產規定。簡言之,Château-Chalon代表是高人一等的Vin Jaune。
**註2:近年來Domaine Jean Bourdy決定將培醞期間品質不符合標準而無法繼續培醞為Vin Jaune或Château-Chalon的Savagnin單獨裝瓶,此款不定期上市的Cotes du Jura Savagnin,是酒莊這麼多年以來唯一一款新增加的酒款。
除了上述四款經典酒款之外,Jean Bourdy也生產數款別具產區特色的傳統酒款:不同於其它酒莊所生產的Vin de Paille(麥稈風乾葡萄甜酒),Jean Bourdy的Vin de Paille是以極高比例的Poulsard紅葡萄(通常70%)混釀其他品種而成,而且並非每個年份都生產;另外除了生產傳統的Macvin利口甜酒(以剛發酵的葡萄榨汁混入三分之一的Marc du Jura葡萄渣釀白蘭地而成),酒莊更引以為傲的是一款名為Galant des Abbesses的特殊利口甜酒,這是十六世紀當地修女所流傳下來的神祕配方,在剛榨好的葡萄汁中加入25種天然藥草,一起放入銅鍋中,經過一天柴火的慢火加熱後,濃縮的果汁再混加三分之一的特老年份的渣釀白蘭地Marc或精釀白蘭地Fine,進入老桶中進行至少五年以上的培醞而成,獨一無二的風味,贏得許多讚譽的口碑。(Cellartracker評價92.7超高分,請參考http://www.cellartracker.com/wine.asp?iWine=637551)。另外擁有酒商牌照的Jean Bourdy,也以從長期合作的果農朋友所買來的Chardonnay和Pinot Noir釀造Crémant du Jura,這種以傳統瓶中二次發酵的氣泡酒,一直以是侏羅產區的重要的特色酒款,占整個產區約三分之一的產量,Crémant du Jura是在1995被升等為全法第七個Crémant的法定產區。雖法定可用多種品種混釀,酒莊一直以來傾向只使用Chardonnay或Pinot Noir,以追求更精緻清爽的口感。

2020 Côtes du Jura Blanc Chardonnay白酒 RP92特價****.-
The Côtes du Jura Chardonnay has been updated with a new label and name, now called the 2020 Les Jumelles Chardonnay, an ouillé white from vines on deep Lias and Trias soils that produce grapes with good acidity and with a good yield in 2020. It fermented in tank with indigenous yeasts and matured in used barrels for close to three years. It went through full malolactic. It has a characterful nose beyond varietal and floral aromas, spicy and herbal, with moderate ripeness for a warm year and 13% alcohol on the label. It's velvety, tasty and with pungent and persistent flavors.
2019 Côtes du Jura Blanc Savagnin白酒 RP93特價****.- <極限量>
The Côtes du Jura Savagnin also has an updated name and label, of which I tasted the 2019 Sosthène Savagnin. It's a traditional Savagnin aged in used oak barrels for three years, and during that time, they were never topped up in the traditional way in the zone. So, the wine developed a thin veil of flor yeasts that gave it a peculiar nose of mushrooms, spices and herbs. It's pungent and with reminiscences of the Vin Jaune that is produced this way but keeping the wine under the veil for (at least) the following six years after the harvest. I love this style of wine, but it's a bit of an acquired taste, very different, characterful, aromatic and expressive. It comes from a 3.3-hectare plot on marl soils. 2019 was a very complete year with good yields, ripeness and freshness, and the wine comes through as very tasty and balanced with the classical bitter and salty twist in the finish.
2022 Côtes du Jura Rouge紅酒 RP91特價****.-
The traditional red blend also has a new label and name. The 2022 Henriette Rouge, a blend of Trousseau, Poulsard and Pinot Noir from red clay soils, co-fermented with natural yeasts and full clusters for three weeks with daily pumping overs and matured in oak barrels for around 18 months. It has notes of wild berries and herbs, with moderate ripeness and alcohol (12%), and it's light to medium-bodied, with fine tannins and some earthy sensations. Better with food.
2016 Vin Jaune黃酒 RP94特價****.-<極限量>
The pungent and textbook 2017 Côtes du Jura Armand Vin Jaune has notes of iodine, peat, more mushrooms, celery and curry. It has a bright and pale golden color, denoting freshness and youth. It was produced with grapes from old vines on gray clay and marl soils. The clusters were pressed and the juice let to settle for one day before fermenting. It matured in used small barrels for close to seven years, during which time, 30% of the volume evaporated and the wine became further concentrated. It, of course, developed a thin layer of flor yeasts that protected it from oxidation and gave it the spicy and yeasty nose and a tasty, bittersweet and salty palate. It's an excellent example of the traditional style unique to Jura. Lovely. It has a dry, chalky and tasty finish. This style of wine ages for a very long time in bottle.
